Ginger, juniper berries and other spices have been prized for centuries for their many uses, from herbal medicines to teas and infused spirits. Early European seafaring explorers sought new trade routes to source these spices, eventually leading to Victoria’s early tea culture. Sea Cider salutes this history with Ginger Perry (aka Ginger Paradise), part of our Barrel Series.

How We Make This Cider
To craft Ginger Perry (aka Ginger Paradise), we start by preparing our own eau de vie by soaking fresh cut ginger and crushed juniper berries in local spirits. The eau de vie is aged for up to a year in oak barrels, then added to cider that has been fermented from the best of British Columbian apples. Finally, a dose of fresh pear juice is added to balance the spice. Expect zesty notes of ginger and juniper to mingle with the sweet, lively acidity of the pear juice in a perfectly balanced, semi-sweet union.

Barrel Series
Centuries before stainless steel tanks were available, it was common practice to age cider in oak barrels. In particular, used oak barrels were once a cidermaker’s most convenient storage option. Their use imparted a range of additional notes to traditional cider, from the spirited notes of rum, gin and bourbon to the wine notes of sherry and fermented grapes.
Our Barrel Series pays tribute to these traditional oak aging methods by using different types of oak to age a selection of our ciders. This imparts a variety of aromatics and flavour notes to the ciders, while creating a complex and structured finished product.
Products in the Barrel Series include, in preferred tasting order: Ginger Perry/Ginger Paradise; Rumrunner; Wassail.
