Hot to the palate and with a rich nose of dried fruit, Pommeau is a Canadian twist on the European tradition of blending fresh pressed apple juice with eau de vie. Raise a glass of Sea Cider, where apples live the good life!
How We Make This Cider
Pommeau is a classic fortified cider that pays homage to Pommeau de Normandie. We start with organically certified BC-grown Snow apples, pressing them carefully to preserve their freshness. Then we blend this unfermented apple juice with local spirits, called eau de vie, from our neighbours at Victoria Distillers. The unfermented apples impart sweetness and acidity which is carefully balanced with the heat from the eau de vie. This blend is aged in bourbon and Hungarian oak barrels for up to one year to impart colour and a hint of spice and tannin.

Food pairings: Bold flavours, either very savoury or very sweet. In Normandy, Pommeau is served as an aperitif or palate cleanser between courses, but works well as a dessert cider in place of a sherry. Try with chocolate, hazelnuts, “drunken apricots,” or strong cheeses such as Roquefort.
