For Wild English, we do not introduce a cultured yeast. Instead, we allow the naturally occurring yeast that comes into the cellar from the orchard to carry out a “wild” fermentation. For centuries, British and European cidermakers have used cider-specific varietals to impart complexity in cider that ordinary eating apples cannot achieve.
