Great cider comes from the finest apples. Our Cyser is crafted from our farm pressed apples blended with fermented honey. The result is a still, aperitif-style cider with subtle flavours of apple, honey and citrus. Raise a glass to honey bees!
Cyser is one of the oldest fermented beverages on Earth: a blend of fermented honey and apple juice. We have crafted it to be reminiscent of “Tej”, an ancient drink of fermented honey that Kristen used to drink when she lived in East Africa. Blending apple juice with honey was one of the traditional ways to improve the fermentation of honey, since the juice was full of nutrients which the honey lacked and on which fermentation depends.
Sea Cider produces a style of Cyser that is high in alcohol and sweet to the taste. Fermentation takes approximately six months and requires regular aeration, which in turn promotes wine-like minerality on the nose. Certified organic clover honey is used, resulting in subtle notes of mead balanced with apple skin aromas.
