As part of our Barrel Series, this semi-sweet sparkler awakens the palette with cinnamon and hot pepper bitters blended with our farm-crafted apple cider and oakened sherry. Raise a glass of Sea Cider to spicy sweethearts!
The Story Behind Cinnamon Heart
Cinnamon Heart is part of our Barrel Series, which contains other high alcohol Sea Ciders like Rumrunner (Prohibition) and Wassail. As the name implies, each cider in the Barrel Series is influenced by oak aging and spirits. In the case of Cinnamon Heart, we oak Canadian sherry which, when blended with hard cider, adds a hint of walnuts, caramel and figs. Oak barrels have been used in cidermaking for centuries, imparting a variety of complex aromatics and flavours, depending on the oak being used. At Sea Cider we keep American oak barrels on hand, which have been used for gin, rum, bourbon and sherry aging. Additionally, we use French and Hungarian oak chips at times to add even more layers of interest to our Barrel Series ciders.
To create Cinnamon Heart we oak Canadian sherry then blend it with cider we ferment using the highest grade of British Columbian apples. We ferment our apples with champagne yeast in stainless steel tanks at cool temperatures to maximize the cider’s aromatics. Once aged, the final cider is blended with a dash of our very own cinnamon and hot pepper bitters. We create our bitters by soaking cinnamon bark and hot pepper flakes in eau de vie from our neighbours at Victoria Distillers. These ingredients blend to create a synergy of sweet, spicy and hot sensations. Cinnamon Heart hits the nose with aromas of apples and cinnamon and finishes with lingering warmth.
